My name is Ashley and I am a new vegetarian. As of January 1, 2011 I began my meat-less diet journey. I toyed with the idea of vegetarianism several times, finding that I could go about a week without meat before I was in desperate need of a burger. I finally decided to give it a go – full force – as part of my extensive New Year’s resolution list for 2011.
However, several weeks into my new lifestyle I realized that I was missing something. I knew it wasn’t the meat I was missing, but something was definitely not quite right. As someone with several food allergies (soy, dairy, and various fruits) the biggest thing I was missing was balance. My diet became full of carbs, beans, and rice cheese with very little variance in between. This blog is a chronicle of my quest to bring balance to the Force – or less dramatically, my diet – and find a happy medium in my meat-less, dairy-less, soy-less food consumption.
